I set up this breakfast while my son was talking about his first soccer training and a rich and healthy breakfast with the colours of my hometown, Verona, came up!
I never dislike eggs for my breakfast so I cooked a simple beaten egg (always choose organic free-range ones, please*) and add it to the plate together with a sliced banana: this way, there is no need to use any kind of sugar on the egg.
For the carbs part, I had a small roll with almond butter spread on top and four or five almonds on the side.
I picked the almonds from my fridge as I keep them soaked in water, which helps the seeds in releasing enzymes (which in turn helps with digestion). The same process works with most nuts and other seeds.
I do not prepare the almond butter myself although I always choose it organic and with no other ingredients, other than almonds.

As for the fruit part: my neighbor brought me, from her magnificent, pesticide-free garden in Luzern, a good share of mirabelles, which I eat like there is no tomorrow. Tasty little plums.
I have my coffee later on in the morning these days.
I recently restarted my iron treatment so I can not drink coffee after taking the morning tablet.
I replace the espresso with a small glass of water and I eat lots of fruit (I struggle to drink in the morning and the fruit helps me in this sense).
By the way, don’t you like this cup? It is a present from a dear friend who visited me this year from London: the brand (shame, I did not know before) is Oliver Bonas and their fashion and homeware articles are just mind-blowing.
